Ingredients

1 cup basmati rice (soaked for 30 minutes)

3/4 cup sugar (adjust to taste)

2 tbsp ghee

2-3 green cardamoms

1 small cinnamon stick

2-3 cloves

2 tbsp chopped almonds

2 tbsp chopped pistachios

2 tbsp raisins

1/2 tsp saffron (soaked in 2 tbsp warm milk)

1/4 tsp yellow food color (optional)

2 cups water

1/4 tsp kewra water (optional, for aroma)


Instructions

1. Cook the Rice:

Boil water in a pan, add soaked rice and cook until 80% done.

Drain and set aside.



2. Prepare the Sweet Base:

In a pot, heat ghee, add cardamom, cinnamon, and cloves. Sauté for a few seconds.

Add sugar and a little water, cook until sugar dissolves.

Stir in the saffron milk and food color.



3. Combine Rice and Nuts:

Add the cooked rice to the sugar syrup, mix gently.

Cover and let it cook on low heat for 10 minutes.

Sprinkle almonds, pistachios, raisins, and kewra water.



4. Serve Warm:

Fluff up the rice gently and serve warm.
