Google Sheets already has a feature that allows you to simply select the dataset and instantly highlight alternate rows.

You can quickly specify the formatting (i.e., the color of the header, and the color of each row).

In case you don't want the alternate coloring feature to be active, you can easily remove it as well.

One of the best things about the 'Alternate Coloring' feature in Google Sheets is that if you expand the dataset and add more records at the bottom, Google Sheets will automatically highlight the alternate rows in the colors you specified.

However, in case you delete records, the colors would stay and you would have to manually remove these.

But if you want to highlight every Nth row (i.e., every third row or every fourth row), you need to use Conditional Formatting for it.

With Conditional Formatting, you can specify a formula that returns TRUE for every third row (in case you want to color every third row). When you use this formula, it only applies the formatting to every third row.
